Zucchini Boats Ingredients

  • 4 medium medium zucchini
  • 1 cup cooked quinoa
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh basil for garnish

Method

Preparation

  • Preheat your oven to 375°F (190°C).
  • Slice the zucchinis in half lengthwise and scoop out the insides, creating boats.
  • In a bowl, mix the quinoa, marinara sauce, diced tomatoes, 1/2 cup mozzarella, Parmesan, oregano, garlic powder, salt, and pepper.
  • Fill each zucchini boat with the quinoa mixture.
  • Top with the remaining mozzarella cheese.
  • Place the stuffed zucchinis in a baking dish and cover with foil.
  • Bake for 25 minutes, then remove the foil and bake for an additional 10 minutes until the cheese is bubbly.
  • Garnish with fresh basil before serving.
