Ingredients

  • cups full-fat cottage cheese
  • ¼ cup honey or maple syrup to taste
  • 2 –3 tablespoons from a jar of lemons preserved lemons, lemon curd, or marmalade
  • Zest from 1 lemon
  • 2 tablespoons fresh lemon juice
  • ½ teaspoon vanilla extract
  • Optional: pinch of salt lemon curd swirl, crushed graham crackers

Method

  • 1. Add cottage cheese, honey/maple, jar of lemons, lemon juice, zest, and vanilla to a blender.
  • 2. Blend until completely smooth, scraping down sides as needed.
  • 3. Taste and adjust sweetness or lemon as desired.
  • 4. Pour into a loaf pan or freezer-safe container.
  • 5. Swirl in any optional lemon curd or graham crackers.
  • 6. Freeze for 4–6 hours or until solid.
  • 7. Let sit 5–10 minutes before scooping and serving.
