- 2 medium Cucumbers Sliced
- 8 oz Fresh mozzarella cheese Cut into bite-sized pieces
- 1 pt Cherry tomatoes Halved
- 1 cup Fresh basil leaves Chopped or whole
Dressing
- 2 tablespoons Olive oil
- 1 tablespoon Balsamic vinegar
- to taste Salt
- to taste Pepper
Method
Preparation
- Slice the cucumbers and cherry tomatoes.
- Cut the mozzarella into bite-sized pieces.
- In a bowl, combine the sliced cucumbers, tomatoes, mozzarella, and basil leaves.
- Drizzle with olive oil and balsamic vinegar, and season with salt and pepper.
- Toss gently to combine.
Serving
- Serve immediately or chill in the refrigerator before serving.
