Ingredients
Pasta and Vegetables
- 2 cups pasta Use any pasta shape you prefer.
- 1 cup grilled corn Canned corn can be used if grilled corn isn't available.
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
Dressing and Toppings
- 1/4 cup olive oil
- 2 tablespoons lime juice
- 1/2 cup feta cheese, crumbled Add right before serving for freshness.
Method
Preparation
- Cook the pasta according to package instructions. Drain and rinse it with cold water to cool the pasta.
- In a large bowl, combine the cooled pasta, grilled corn, cherry tomatoes, red bell pepper, red onion, and cilantro.
Dressing
- In a separate bowl, whisk together the olive oil, lime juice, salt, and pepper.
- Pour the dressing over the pasta salad and toss it to coat everything evenly.
Finishing Touches
- Gently fold in the feta cheese.
- Serve the salad immediately or refrigerate it for an hour before serving to let the flavors meld together.
