Ingredients

Pasta and Vegetables

  • 2 cups pasta Use any pasta shape you prefer.
  • 1 cup grilled corn Canned corn can be used if grilled corn isn't available.
  • 1 cup cherry tomatoes, halved
  • 1 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped

Dressing and Toppings

  • 1/4 cup olive oil
  • 2 tablespoons lime juice
  • 1/2 cup feta cheese, crumbled Add right before serving for freshness.

Method

Preparation

  • Cook the pasta according to package instructions. Drain and rinse it with cold water to cool the pasta.
  • In a large bowl, combine the cooled pasta, grilled corn, cherry tomatoes, red bell pepper, red onion, and cilantro.

Dressing

  • In a separate bowl, whisk together the olive oil, lime juice, salt, and pepper.
  • Pour the dressing over the pasta salad and toss it to coat everything evenly.

Finishing Touches

  • Gently fold in the feta cheese.
  • Serve the salad immediately or refrigerate it for an hour before serving to let the flavors meld together.
