  • 1 cup heavy cream Can substitute with coconut cream for a lighter option.
  • 1/2 cup sun-dried tomatoes, chopped Roasted red peppers can be used as an alternative.
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • 1/2 cup grated Parmesan cheese
  • for garnish Fresh basil

Method

Preparation

  • Season the chicken breasts with salt, pepper, garlic powder, and onion powder.
  • In a large skillet over medium heat, sear the chicken breasts for 4-5 minutes on each side until golden brown.
  • Remove the chicken from the skillet and set aside.
  • In the same skillet, add chicken broth and sun-dried tomatoes, bringing the mixture to a simmer.
  • Stir in the heavy cream and Parmesan cheese, mixing well to combine.
  • Return the chicken to the skillet, cover, and let it simmer for about 10-15 minutes, or until the chicken is cooked through.
  • Garnish with fresh basil before serving.
