Ingredients

Protein and Base Ingredients

  • 1 lb Ground beef You can also use ground turkey or chicken
  • 1 lb Ground turkey Use for meatballs or as an alternative to beef

Vegetables

  • 2 medium Bell peppers Chopped
  • 1 medium Onion Chopped
  • 2 medium Zucchini Sliced, used in taco casserole

Canned and Dry Goods

  • 1 can Canned tomatoes Use diced or crushed
  • 1 can Black beans Can be substituted with cauliflower rice for lower carb
  • 2 tbsp Chili powder Adjust to taste for heat

Cooking Essentials

  • 2 tbsp Olive oil For browning the meat and vegetables
  • 1/2 cup Parmesan cheese Grated, for taco casserole and meatballs

Spices

  • 1 tsp Cumin Add for flavor
  • 1 tsp Garlic powder Optional seasoning

Method

Chili Preparation

  • In a large pan, heat olive oil over medium heat and brown the ground beef with chopped onions and bell peppers.
  • Mix in chili powder and canned tomatoes, and let the mixture simmer for about 30 minutes.

Taco Casserole Assembly

  • Layer the browned ground meat in a baking dish with sliced zucchini, grated parmesan, and spices.
  • Bake in a preheated oven at 350°F for 30 minutes until bubbly.

Meatball Preparation

  • In a bowl, mix ground turkey with grated parmesan and spices, then roll into balls.
  • Place the meatballs onto a baking sheet and bake at 400°F for 20 minutes until cooked through.

  • Portion the prepared meals into airtight containers for easy meal prep.
