Ingredients

Soup Base

  • 1 pound ground beef or turkey Can use ground chicken or pork for variation.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes with green chilies
  • 1 can (15 oz) black soybeans, drained and rinsed Optional for strict keto.
  • 1 cup beef broth
  • 1 tablespoon taco seasoning Homemade or store-bought.
  • to taste salt and pepper

Toppings

  • 1 cup shredded cheese (cheddar or Mexican blend)
  • to taste sour cream Optional for serving.
  • to taste sliced jalapeños Optional for serving.

Method

Preparation

  • In a skillet over medium heat, brown the ground meat with the chopped onion and minced garlic until fully cooked.
  • Transfer the meat mixture to the slow cooker.
  • Add the diced tomatoes, black soybeans (if using), beef broth, taco seasoning, salt, and pepper. Stir to combine.

Cooking

  • Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
  • Once done, taste and adjust seasoning if needed.

Serving

  • Ladle the soup into bowls, top with shredded cheese, and add optional sour cream and jalapeños.

Notes
