Ingredients
Soup Base
- 1 pound ground beef or turkey Can use ground chicken or pork for variation.
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes with green chilies
- 1 can (15 oz) black soybeans, drained and rinsed Optional for strict keto.
- 1 cup beef broth
- 1 tablespoon taco seasoning Homemade or store-bought.
- to taste salt and pepper
Toppings
- 1 cup shredded cheese (cheddar or Mexican blend)
- to taste sour cream Optional for serving.
- to taste sliced jalapeños Optional for serving.
Method
Preparation
- In a skillet over medium heat, brown the ground meat with the chopped onion and minced garlic until fully cooked.
- Transfer the meat mixture to the slow cooker.
- Add the diced tomatoes, black soybeans (if using), beef broth, taco seasoning, salt, and pepper. Stir to combine.
Cooking
- Cover the slow cooker and cook on low for 6-8 hours or high for 3-4 hours.
- Once done, taste and adjust seasoning if needed.
Serving
- Ladle the soup into bowls, top with shredded cheese, and add optional sour cream and jalapeños.

Notes
