  • 1 medium Onion, chopped
  • 2 stalks Celery, chopped
  • 2 medium Carrots, chopped
  • 2 leaves Bay leaves
  • 1 tablespoon Parsley, chopped For garnishing

  • 4 cups Broth or water

Method

Preparation

  • In a large pot, sauté the chopped onions, celery, and carrots until they are softened.
  • Add the leftover turkey or rotisserie chicken and stir for a few minutes.
  • Pour in the broth or water and add bay leaves to the pot.
  • Season with salt and pepper to taste.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for 20-30 minutes.
  • Remove the bay leaves and stir in the chopped parsley before serving.
