- 1 lb sausage (sweet or spicy)
- 4 cups potatoes (diced)
- 1 large onion (chopped)
- 2 cloves garlic (minced)
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale or spinach (optional)
- Salt and pepper to taste
- Olive oil (for sautéing)
Method
Cooking Instructions
- In a large pot, heat some olive oil over medium heat.
- Add the sausage and cook until browned. Remove the sausage and set aside.
- In the same pot, add the chopped onions and minced garlic. Sauté until softened.
- Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and let simmer until the potatoes are tender.
- Stir in the heavy cream and cooked sausage. Optionally, add kale or spinach.
- Season with salt and pepper to taste. Simmer for another 5-10 minutes until heated through.
- Serve the soup warm. Enjoy!

Notes
