Ingredients

  • 1 lb sausage (sweet or spicy)
  • 4 cups potatoes (diced)
  • 1 large onion (chopped)
  • 2 cloves garlic (minced)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale or spinach (optional)
  • Salt and pepper to taste
  • Olive oil (for sautéing)

Method

Cooking Instructions

  • In a large pot, heat some olive oil over medium heat.
  • Add the sausage and cook until browned. Remove the sausage and set aside.
  • In the same pot, add the chopped onions and minced garlic. Sauté until softened.
  • Add the diced potatoes and chicken broth to the pot. Bring to a boil, then reduce heat and let simmer until the potatoes are tender.
  • Stir in the heavy cream and cooked sausage. Optionally, add kale or spinach.
  • Season with salt and pepper to taste. Simmer for another 5-10 minutes until heated through.
  • Serve the soup warm. Enjoy!
