Method
Preparation
- Preheat the oven to 375°F (190°C).
- In a large bowl, whisk together the cottage cheese and eggs until smooth.
- Stir in the diced bell peppers, chopped spinach, shredded cheese (if using), salt, and pepper.
- Grease a muffin tin with olive oil or cooking spray.
- Pour the egg mixture evenly into the muffin cups.
Cooking
- Bake for 20-25 minutes, or until the egg bites are set and lightly golden.
- Let cool slightly before removing from the tin.
