  • 4 oz cream cheese, softened Make sure it's softened for easier mixing.
  • 1 cup fresh spinach, chopped Feel free to swap for other greens like kale or Swiss chard.
  • 1/2 cup grated Parmesan cheese Can be substituted with feta for a Mediterranean twist.
  • 1 teaspoon garlic powder

Method

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a bowl, mix cream cheese, spinach, Parmesan cheese, garlic powder, salt, and pepper together until well combined.
  • Cut a pocket in each chicken breast and stuff with the cheese mixture.

Cooking

  • Heat olive oil in an oven-safe skillet over medium heat.
  • Sear each chicken breast for 2-3 minutes on each side until golden brown.
  • Transfer the skillet to the oven and bake for 20-25 minutes, or until the chicken is cooked through.
  • Let the chicken rest for a few minutes before slicing and serving.
