- 1 cup silken tofu
- 1 ripe mango, peeled and pitted
- 1 ripe peach, peeled and pitted
- 1/2 cup coconut milk
- 2 tablespoons maple syrup or honey (to taste)
- 1 teaspoon vanilla extract
- 1 pinch salt
Method
Preparation
- In a blender, combine the silken tofu, mango, peach, coconut milk, maple syrup (or honey), vanilla extract, and a pinch of salt.
- Blend until smooth and creamy.
- Taste and adjust sweetness if necessary.
- Pour the mousse into serving dishes and refrigerate for at least 30 minutes before serving.
Serving
- Serve chilled, optionally topped with fresh fruit or coconut flakes.

Notes
