Ingredients

Salad Ingredients

  • 1 cup quinoa Rinsed to remove bitterness
  • 2 cups water
  • 1 ripe mango, diced Fresh mango adds sweetness
  • 1 red bell pepper, diced
  • 1/2 medium red onion, finely chopped
  • 1 cup cucumber, diced
  • 1/4 cup fresh cilantro, chopped

Dressing Ingredients

  • 2 juices limes Juice fresh limes for better flavor
  • 3 tablespoons olive oil
  • Salt and pepper to taste Adjust according to preference

Method

Cooking Quinoa

  • Rinse the quinoa under cold water.
  • In a saucepan, combine quinoa and water. Bring to a boil.
  • Reduce heat, cover, and simmer for about 15 minutes until quinoa is fluffy.

Prepare Salad

  • In a large bowl, combine diced mango, bell pepper, red onion, cucumber, and cilantro.
  • Once quinoa is cooked, let it cool slightly and add it to the vegetable mixture.

Make Dressing

  • In a small bowl, whisk together lime juice, olive oil, salt, and pepper.

Combine and Serve

  • Pour dressing over the salad and toss to combine.
  • Serve chilled or at room temperature.
