- 1 cup quinoa Rinsed to remove bitterness
- 2 cups water
- 1 ripe mango, diced Fresh mango adds sweetness
- 1 red bell pepper, diced
- 1/2 medium red onion, finely chopped
- 1 cup cucumber, diced
- 1/4 cup fresh cilantro, chopped
Dressing Ingredients
- 2 juices limes Juice fresh limes for better flavor
- 3 tablespoons olive oil
- Salt and pepper to taste Adjust according to preference
Method
Cooking Quinoa
- Rinse the quinoa under cold water.
- In a saucepan, combine quinoa and water. Bring to a boil.
- Reduce heat, cover, and simmer for about 15 minutes until quinoa is fluffy.
Prepare Salad
- In a large bowl, combine diced mango, bell pepper, red onion, cucumber, and cilantro.
- Once quinoa is cooked, let it cool slightly and add it to the vegetable mixture.
Make Dressing
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
Combine and Serve
- Pour dressing over the salad and toss to combine.
- Serve chilled or at room temperature.
