Ingredients
For the salad
- 2 cups cooked chicken breast, shredded You can use rotisserie chicken for convenience.
- 1 cup Greek yogurt Adds creaminess without extra calories.
- 1/2 cup cucumber, diced
- 1/4 cup red onion, chopped
- 1/2 cup cherry tomatoes, halved
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh dill, chopped
- 2 tablespoons lemon juice Freshly squeezed for best flavor.
- Salt and pepper to taste
Method
Preparation
- In a bowl, combine the Greek yogurt, lemon juice, salt, and pepper to create the dressing.
- In a large mixing bowl, combine the shredded chicken, cucumber, red onion, cherry tomatoes, parsley, and dill.
- Pour the dressing over the salad and mix until well combined.
- Serve chilled.
