Ingredients

For the salad

  • 2 cups cooked chicken breast, shredded You can use rotisserie chicken for convenience.
  • 1 cup Greek yogurt Adds creaminess without extra calories.
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh dill, chopped
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.
  • Salt and pepper to taste

Method

Preparation

  • In a bowl, combine the Greek yogurt, lemon juice, salt, and pepper to create the dressing.
  • In a large mixing bowl, combine the shredded chicken, cucumber, red onion, cherry tomatoes, parsley, and dill.
  • Pour the dressing over the salad and mix until well combined.
  • Serve chilled.
