Ingredients
For the chicken and marinade
- 4 pieces Chicken breasts Boneless, skinless
- 1 large Lemon Juiced
- 1/4 cup Fresh dill Chopped
- 1/4 cup Olive oil
- 3 cloves Garlic Minced
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
For the bowls
- 1 medium Cucumber Chopped
- 1 cup Cherry tomatoes Halved
- 1/2 medium Red onion Chopped
- 4 cups Mixed greens
Method
Preparation
- Marinate the chicken breasts in olive oil, lemon juice, minced garlic, chopped dill, salt, and pepper for at least 30 minutes.
- While the chicken is marinating, chop the cucumber, cherry tomatoes, and red onion.
Cooking
- Grill the marinated chicken until cooked through.
- Prepare a bed of mixed greens in serving bowls.
- Slice the grilled chicken and place it on top of the mixed greens.
- Add the chopped vegetables and drizzle with extra lemon-dill dressing if desired.
Serving
- Serve immediately or store in the fridge for meal prep.

Notes
For extra flavor, let the chicken marinate overnight. Customize the vegetables to your liking. Dried dill can be used if fresh isn't available, just reduce the amount.
