- 1 lb 85/15 ground beef
- 1 small onion, diced (about ¼ cup)
- 1 packet taco seasoning mix (1 oz.)
- 1 can green chiles (4 oz.)
- 1 can black beans (15.5 oz.), rinsed and drained
- 1 bag frozen corn (14.4 oz.)
- 1 can red enchilada sauce (10 oz.)
- 3 cups shredded cheddar & Monterey jack cheese, divided
- 4 cups frozen tater tots
- Cilantro (optional garnish)
- Sour cream (optional)
Method
Preparation
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef and diced onion over medium heat until the beef is browned. Drain the excess fat.
- Stir in the taco seasoning, green chiles, black beans, frozen corn, and red enchilada sauce. Mix well and heat through.
- In a greased 9x13 inch baking dish, spread the meat mixture evenly.
- Sprinkle 2 cups of the shredded cheese on top of the meat mixture.
- Layer the frozen tater tots on top of the cheese.
Baking
- Bake in the preheated oven for about 25 minutes.
- Remove from the oven and sprinkle the remaining cheese on top.
- Return to the oven for another 10-15 minutes, or until the cheese is bubbly and golden.
Serving
- Garnish with cilantro and serve with sour cream if desired.

Notes
Feel free to add more vegetables like bell peppers or corn for extra nutrition. You can use leftover taco meat to make this recipe even quicker. Adjust the spice level by using mild or spicy taco seasoning depending on your preference.
