- 2 cups freshly grated carrots Make sure to squeeze out excess moisture.
- 1 cup cottage cheese For a smoother texture, consider blending before mixing.
- 2 cups rolled oats Old-fashioned oats work best.
- 2 large eggs
- 1 tsp ground cinnamon
- 0.5 tsp ground nutmeg
- 1 tsp baking powder
- 0.5 cup walnuts Roughly chopped.
- 1 pinch sea salt
Method
Preparation
- Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper for easy removal.
- Use a box grater or food processor to freshly grate 2 cups of carrots. Squeeze out excess moisture with a clean towel.
- In a large bowl, combine cottage cheese and eggs. Stir until smooth, or blend cottage cheese first for ultra-smooth bars.
Mixing
- Add rolled oats, cinnamon, nutmeg, baking powder, and salt. Stir until evenly combined without overmixing.
- Gently fold in the grated carrots and chopped walnuts until evenly distributed.
- Pour the batter into the prepared pan and spread evenly. Press down slightly with a spatula.
Baking
- Bake for 25–35 minutes until the edges are lightly golden and the center is set. A toothpick should come out mostly clean.
- Let the bars cool completely in the pan before slicing into 12 bars.

Notes
