  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium bell pepper, chopped
  • 28 oz can diced tomatoes
  • 2 cups beef broth Substitute with vegetable broth for a vegetarian version.
  • 2 cups elbow macaroni Cook according to package instructions.
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional) Use for garnishing before serving.

Method

Cooking

  • In a large pot, brown the ground beef over medium heat. Drain excess fat.
  • Add chopped onion, garlic, and bell pepper; sauté until softened.
  • Stir in the diced tomatoes, beef broth, Italian seasoning, salt, and pepper.
  • Bring to a boil, then add the elbow macaroni.
  • Reduce heat, cover, and simmer for about 15-20 minutes until pasta is cooked.
  • If desired, sprinkle with shredded cheese before serving.
