Ingredients
- 1 lb (450 g) ground beef (85–90% lean)
- 1 Tbsp olive oil
- ¾ tsp kosher salt
- ½ tsp black pepper
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tsp paprika
- 1 tsp dried thyme or Italian seasoning
- 1½ lb (680 g) potatoes, cut into ½-inch cubes
- 1 cup (240 ml) beef broth
- ½ cup (120 ml) milk
- 3 oz (85 g) cream cheese, softened
- 1 tsp Dijon mustard
- 1 cup (100 g) shredded cheddar or mozzarella
- 1 cup diced bell pepper or peas
- 1 Tbsp lemon juice (optional)
- chopped parsley, to finish

Method
- Heat a large skillet over medium-high heat. Add olive oil and ground beef; season with salt and pepper. Cook until browned and internal temperature reaches 160°F / 71°C, then drain excess fat.
- Add diced onion and minced garlic to the skillet; cook for 2–3 minutes until softened and fragrant. Stir in paprika and thyme (or Italian seasoning).
- Add cubed potatoes and pour in beef broth. Cover and simmer for 8–10 minutes until potatoes are just tender.
- Reduce heat to low. Stir in milk, cream cheese, and Dijon mustard until the sauce becomes smooth and creamy.
- Fold in diced bell pepper or peas, then sprinkle cheese on top. Cover for 2–3 minutes until cheese melts.
- Finish with lemon juice and chopped parsley. Adjust seasoning to taste and serve warm.
