Method
Preparation
- In a large skillet, heat olive oil over medium heat.
- Season the chicken breasts with salt and pepper, and brown them in the skillet for about 5 minutes on each side.
- Remove the chicken and set it aside.
Cooking
- In the same skillet, add diced onion and bell pepper, and sauté until softened.
- Stir in the rice, BBQ sauce, chicken broth, and honey. Mix well.
- Place the chicken back into the skillet, cover, and let everything simmer for about 20 minutes or until the rice is cooked.
Serving
- Serve warm and enjoy! You can serve directly from the skillet or garnish with chopped green onions or fresh herbs.
