Method
Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix honey, minced garlic, and soy sauce together.
- Slice the kielbasa into bite-sized pieces and add it to the bowl. Toss to coat well in the honey garlic mixture.
- Prepare your veggies: chop bell peppers, slice carrots if using regular ones, and cut baby potatoes in half.
Cooking
- On a large baking sheet, add the kielbasa and veggies. Drizzle with olive oil, sprinkle with salt and pepper, and toss everything together.
- Spread the mixture in an even layer and bake for 25-30 minutes, or until the veggies are tender and the kielbasa starts to brown.
- Once done, garnish with fresh parsley or green onions before serving.

Notes
