- 4 pieces boneless, skinless chicken breasts
- 1/2 cup balsamic vinegar
- 1 tablespoon olive oil
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella, diced
- 1/4 cup fresh basil, chopped
- Salt and pepper, to taste
Method
Cooking
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
- Add the chicken to the skillet and cook until browned, about 5-7 minutes per side.
- Pour the balsamic vinegar over the chicken and let it simmer for a few minutes until slightly thickened.
- Add the halved cherry tomatoes on top of the chicken. Cover the skillet and let everything cook for another 5 minutes.
- Remove the lid and sprinkle the diced mozzarella over the chicken. Cover again until the cheese melts.
- Garnish with fresh basil before serving. Enjoy your meal!
