  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup balsamic vinegar
  • 1 tablespoon olive oil
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • Salt and pepper, to taste

Method

Cooking

  • In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper.
  • Add the chicken to the skillet and cook until browned, about 5-7 minutes per side.
  • Pour the balsamic vinegar over the chicken and let it simmer for a few minutes until slightly thickened.
  • Add the halved cherry tomatoes on top of the chicken. Cover the skillet and let everything cook for another 5 minutes.
  • Remove the lid and sprinkle the diced mozzarella over the chicken. Cover again until the cheese melts.
  • Garnish with fresh basil before serving. Enjoy your meal!
