- 1 pound ground beef Can substitute with ground turkey or sausage.
- 1 cup diced onions
- 2 cloves garlic, minced
- 1 large carrot, diced
- 1 stalk celery, diced
- 1 can (15 oz) cannellini beans, drained and rinsed You can also use other canned beans.
- 1 can (15 oz) diced tomatoes
- 4 cups beef broth Homemade broth is preferred for added flavor.
- 1 cup small pasta (e.g., ditalini or elbow)
- 1 teaspoon Italian seasoning
- to taste Salt and pepper
- to taste Grated Parmesan cheese for serving
Method
Preparation
- In a large pot, brown the ground beef over medium-high heat until cooked through. Drain excess fat.
- Add onions, garlic, carrot, and celery to the pot. Sauté until vegetables are tender.
Cooking
- Stir in the beans, diced tomatoes, and beef broth. Bring to a boil.
- Add the pasta and Italian seasoning. Reduce heat and simmer until pasta is cooked, about 10 minutes.
- Season with salt and pepper to taste.
Serving
- Serve hot, topped with grated Parmesan cheese.

Notes
If you have leftovers, let them cool down and store in an airtight container in the fridge for about 3-4 days. To reheat, warm it up on the stove or in the microwave, adding a splash of water or broth if needed. For a vegetarian version, omit the ground beef and use vegetable broth instead.
