  • 1 cup rolled oats
  • 1/2 cup mashed banana about 1 medium ripe banana
  • 1/4 cup natural peanut butter use a loose texture for easier mixing
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder do not skip this ingredient
  • 1/4 teaspoon salt
  • 1/4 cup chocolate chips optional

Method

Preparation

  • Preheat the oven to 350°F and line a baking sheet with parchment paper.
  • Mash the banana in a large bowl until smooth with no lumps left.
  • Stir in the peanut butter, honey, and vanilla until the mixture is even.
  • Add the oats, baking powder, and salt, and mix until everything is coated. The dough will be thick and sticky.
  • Fold in the chocolate chips if you are using them.
  • Drop rounded spoonfuls onto the sheet and flatten each one slightly with the back of a spoon. They spread very little, so shape them the way you want them.

Baking

  • Bake for 10 to 12 minutes until the edges are lightly golden.
  • Let them cool on the sheet for 5 minutes before moving them. They firm up as they cool.

Notes
