- 1 cup rolled oats
- 1/2 cup mashed banana about 1 medium ripe banana
- 1/4 cup natural peanut butter use a loose texture for easier mixing
- 1/4 cup honey or maple syrup
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon baking powder do not skip this ingredient
- 1/4 teaspoon salt
- 1/4 cup chocolate chips optional
Method
Preparation
- Preheat the oven to 350°F and line a baking sheet with parchment paper.
- Mash the banana in a large bowl until smooth with no lumps left.
- Stir in the peanut butter, honey, and vanilla until the mixture is even.
- Add the oats, baking powder, and salt, and mix until everything is coated. The dough will be thick and sticky.
- Fold in the chocolate chips if you are using them.
- Drop rounded spoonfuls onto the sheet and flatten each one slightly with the back of a spoon. They spread very little, so shape them the way you want them.
Baking
- Bake for 10 to 12 minutes until the edges are lightly golden.
- Let them cool on the sheet for 5 minutes before moving them. They firm up as they cool.

Notes
Best served warm with soft chocolate chips. Store in an airtight container on the counter for up to a week, two weeks in the fridge, or freeze for a month, separated with parchment.
