Method
Preparation
- Cut the chicken breast into bite-sized pieces and season with salt and pepper.
Cooking
- In a large skillet or wok, heat oil over medium-high heat.
- Add the chicken and stir-fry until golden and cooked through.
- Add garlic and ginger, stirring for 30 seconds.
- Add the pineapple chunks and fresh vegetables, stirring well.
- Pour in soy sauce and honey, mixing until vegetables are tender yet crisp.
