Ingredients
For the mixture
- 1 cup crushed pineapple, drained Ensure it's well-drained
- 1 cup cream cheese, softened Must be softened for easy mixing
- 1/2 cup powdered sugar Adjust sweetness to taste
- 1 teaspoon vanilla extract
For the coating
- 1 cup shredded coconut Extra for rolling
- 1 cup chopped pecans Optional, can substitute with walnuts or almonds
Method
Preparation
- In a large bowl, mix together the crushed pineapple, cream cheese, powdered sugar, and vanilla extract until smooth.
- Stir in the shredded coconut and chopped pecans.
- Chill the mixture for about 30 minutes in the refrigerator.
Forming the balls
- Once chilled, scoop out small portions and roll them into balls.
- Roll each ball in additional shredded coconut or chopped pecans for coating.
- Arrange on a platter and serve.
