Ingredients

For the mixture

  • 1/2 cup powdered sugar Adjust sweetness to taste

For the coating

  • 1 cup shredded coconut Extra for rolling
  • 1 cup chopped pecans Optional, can substitute with walnuts or almonds

Method

Preparation

  • In a large bowl, mix together the crushed pineapple, cream cheese, powdered sugar, and vanilla extract until smooth.
  • Stir in the shredded coconut and chopped pecans.
  • Chill the mixture for about 30 minutes in the refrigerator.

Forming the balls

  • Once chilled, scoop out small portions and roll them into balls.
  • Roll each ball in additional shredded coconut or chopped pecans for coating.
  • Arrange on a platter and serve.
