Method
Preparation
- Preheat the oven to 350°F (175°C). Grease a baking dish.
- In a large bowl, combine the pumpkin puree, cottage cheese, eggs, oats, maple syrup, pumpkin pie spice, vanilla extract, baking powder, and salt. Stir until well mixed.
- Pour the mixture into the prepared baking dish and spread it evenly.
Baking
- Bake for 30-35 minutes or until the center is set and the top is slightly golden.
- Allow to cool for a few minutes before serving. Enjoy warm!
