  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1 pinch salt

Method

Preparation

  • Preheat the oven to 350°F (175°C). Grease a baking dish.
  • In a large bowl, combine the pumpkin puree, cottage cheese, eggs, oats, maple syrup, pumpkin pie spice, vanilla extract, baking powder, and salt. Stir until well mixed.
  • Pour the mixture into the prepared baking dish and spread it evenly.

Baking

  • Bake for 30-35 minutes or until the center is set and the top is slightly golden.
