Method
Preparation
- In a mixing bowl, combine pumpkin seeds, dried cranberries, and rolled oats.
- In a separate bowl, mix together honey (or maple syrup), nut butter, vanilla extract, and salt until smooth.
- Pour the wet ingredients into the dry ingredients and mix thoroughly.
- Once combined, use your hands to form the mixture into small balls, about 1 inch in size.
- Place the energy balls on a plate and refrigerate for at least 30 minutes to firm up.
