Ingredients
For the Hummus Base
- 2 cups Hummus (classic or roasted red pepper) Using high-quality store-bought hummus saves time.
Vegetable Ingredients
- 2 large Carrots, peeled and julienned Provide vibrant orange layer.
- 1 large Yellow Bell Pepper, thinly sliced Adds sunshine yellow color and mild flavor.
- 3 stalks Celery, thinly sliced For fresh, savory crunch.
- 1/2 piece English Cucumber, julienned Ideal for a cool, refreshing crunch.
- 1 large Red Bell Pepper, thinly sliced Adds a bold red layer.
- 1 cup Cherry Tomatoes, halved Serves as a garnish and adds sweetness.
- 2 tablespoons Fresh Parsley or Chives, finely chopped Optional garnish for fresh flavor.
Method
Preparation
- Start by thoroughly washing and drying all your vegetables. Pat them dry with a paper towel to prevent the hummus from becoming watery.
- Peel the carrots and chop all vegetables into uniform, thin sticks or matchsticks, aiming for about 3-4 inches in length for easy handling.
- Halve the cherry tomatoes and finely chop your parsley or chives for garnish. Prepare each ingredient in separate bowls for easier assembly.
Assembly
- Choose clear cups (8-10 ounce) to showcase the colors. Spoon about 2-3 tablespoons of hummus into the bottom of each cup, smoothing it out to create an even base.
- Begin arranging your vegetable sticks in the hummus, placing taller sticks towards the back and creating a rainbow effect by arranging the colors from red to green.
- Add a few cherry tomato halves among the vegetable sticks for extra color and texture. Sprinkle the garnish on top for a fresh finish.
