- 2 cups rolled oats
- 1 cup cottage cheese
- 2 cups milk (or almond milk)
- 1/2 cup raspberries fresh or frozen
- 1/4 cup honey or maple syrup adjust for sweetness
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1 count egg optional for extra protein
Method
Preparation
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the rolled oats, cottage cheese, milk, honey, vanilla, baking powder, cinnamon, and salt. Mix well.
- Gently fold in the raspberries.
- If using an egg, beat it separately and stir it into the mixture before pouring it into the greased baking dish.
- Pour the mixture into a greased baking dish.
Baking
- Bake for 30-35 minutes or until the edges are golden and the center is set.
- Allow to cool slightly before serving. Enjoy it warm or refrigerate for meal prep!
