  • 2 cups rolled oats
  • 1 cup cottage cheese
  • 2 cups milk (or almond milk)
  • 1/2 cup raspberries fresh or frozen
  • 1/4 cup honey or maple syrup adjust for sweetness
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1 count egg optional for extra protein

Method

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large mixing bowl, combine the rolled oats, cottage cheese, milk, honey, vanilla, baking powder, cinnamon, and salt. Mix well.
  • Gently fold in the raspberries.
  • If using an egg, beat it separately and stir it into the mixture before pouring it into the greased baking dish.
  • Pour the mixture into a greased baking dish.

Baking

  • Bake for 30-35 minutes or until the edges are golden and the center is set.
  • Allow to cool slightly before serving. Enjoy it warm or refrigerate for meal prep!
