Ingredients
For the filling
- 1 package cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries Thoroughly wash and pat dry
For the pastry
- 1 package puff pastry (thawed) Ensure it's fully thawed
- 1 egg (for egg wash)
- Sprinkles Optional for decoration
Method
Preparation
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth.
- Roll out the puff pastry on a lightly floured surface and cut it into squares.
- Place a small dollop of the cream cheese mixture and a raspberry on each square of pastry.
- Fold the corners of the pastry over the filling to form a pocket and seal the edges. Brush with an egg wash.
Baking
- Place the bites on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
- Allow to cool slightly before serving. Optionally, sprinkle with extra powdered sugar or sprinkles for decoration.

Notes
Serve Raspberry Cream Cheese Bites warm or at room temperature. Store leftovers in an airtight container in the refrigerator for up to three days. Unbaked bites can be frozen for up to a month.
