Ingredients

For the filling

  • 1 package cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries Thoroughly wash and pat dry

For the pastry

  • 1 package puff pastry (thawed) Ensure it's fully thawed
  • 1 egg (for egg wash)
  • Sprinkles Optional for decoration

Method

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a mixing bowl, blend the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  • Roll out the puff pastry on a lightly floured surface and cut it into squares.
  • Place a small dollop of the cream cheese mixture and a raspberry on each square of pastry.
  • Fold the corners of the pastry over the filling to form a pocket and seal the edges. Brush with an egg wash.

Baking

  • Place the bites on a baking sheet lined with parchment paper and bake for 15-20 minutes until golden brown.
  • Allow to cool slightly before serving. Optionally, sprinkle with extra powdered sugar or sprinkles for decoration.
