Ingredients

For the cookies

  • 1 15.25 oz box red velvet cake mix
  • 1/3 cup vegetable oil
  • 2 pieces eggs
  • 1 teaspoon baking powder
  • 1/2 cup powdered sugar for coating

Method

Preparation

  • In a large mixing bowl, add the cake mix, vegetable oil, eggs, and baking powder. Use an electric hand mixer to mix ingredients until well combined and smooth.
  • Cover the dough with plastic wrap and refrigerate for 15-20 minutes.

Baking

  • Preheat your oven to 350 degrees F. and prepare a cookie sheet with a silicone mat or parchment paper.
  • Take about 3 tablespoons of dough and roll it into a ball. Roll in the powdered sugar and knock off any excess sugar. Place about 2-3 inches apart on a baking sheet.
  • Bake for 10-12 minutes or until the cookies are slightly browned and set on the sides. Don't overbake; the middle will still look a little underdone when you remove it from the oven.
  • Let cool on the baking sheet for 5 minutes, then remove to a wire rack to cool completely.
