- 1 box red velvet cake mix
- 1/2 cup vegetable oil
- 2 large eggs Use room temperature eggs for better mixing.
- as needed cup Powdered sugar for rolling More may be needed for coating.
Method
Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the red velvet cake mix, vegetable oil, and eggs. Mix until well blended.
- Scoop tablespoon-sized amounts of dough and roll them into balls.
- Roll each ball in powdered sugar until fully coated.
- Place the cookies on a baking sheet lined with parchment paper, spaced about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes, or until the edges are set and the centers are soft.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
