- 2 cups fresh strawberries, hulled and halved (about 10 oz) Use fresh strawberries for the best flavor.
- 3 medium lemons, juiced (approximately ½ cup / 4 fl oz lemon juice) Fresh lemon juice provides the best taste.
- 2 to 3 tablespoons honey Adjust sweetness to taste.
- 2 cups ice cubes (about 10 oz) Used to achieve a slushy texture.
- ½ cup water (4 fl oz) Additional water can be added if the mixture is too thick.
Optional Garnish
- to taste fresh mint leaves For garnish.
- to taste splash of sparkling water For fizz if desired.
Method
Preparation
- Rinse and hull the strawberries, then halve or quarter them depending on size.
- Juice the lemons, removing seeds to yield about ½ cup of fresh lemon juice.
Blending
- Place the strawberries, lemon juice, honey, and water into the blender jar. Add fresh mint leaves now if desired.
- Pulse the mixture a few times to break up the fruit, then blend on high until smooth and bright pink with no chunks.
- Add the ice cubes to the blender and pulse in short bursts, blending until you reach a thick, frosty slushie texture that is still pourable.
- If the mixture is too thick, add a splash more water.
Serving
- Taste and adjust sweetness or tartness by adding more honey or lemon juice as desired. Blend briefly again if additions are made.
- Pour into tall glasses, garnish with a strawberry slice or mint sprig, and serve immediately for best icy refreshment.

Notes
