Ingredients

  • 1 lb breakfast sausage (mild or spicy)
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10 oz) Rotel diced tomatoes with green chilies, well drained Make sure to drain well to avoid soggy balls.
  • 1.5 cups Bisquick baking mix
  • 0.5 tsp garlic powder (optional)

Method

Preparation

  • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the sausage, cheddar cheese, drained Rotel, Bisquick, and garlic powder.
  • Mix well using your hands until fully combined.
  • Roll the mixture into 1-inch balls and place them on the prepared baking sheet.

Baking

  • Bake for 20–25 minutes, or until they are golden brown and cooked through.
  • Let cool slightly and serve warm with your favorite dipping sauce.
