Method
Preparation
- Preheat the oven to 400°F (200°C).
- Cut parchment paper into square pieces.
- Place a salmon fillet on one side of the parchment paper.
- Arrange mixed vegetables around the salmon.
- Drizzle olive oil and lemon juice over the salmon and vegetables.
- Sprinkle with lemon zest, dill, salt, and pepper.
- Fold the parchment paper to create a sealed packet.
Cooking
- Place the packets on a baking sheet and bake for 15-20 minutes or until the salmon is cooked through.
