  • 4 pieces salmon fillets Ensure they are of equal size for even cooking.
  • 1 cup cherry tomatoes Fresh tomatoes enhance the flavor.
  • 1/2 cup Kalamata olives, pitted Adds a salty, briny flavor.
  • 1 piece lemon, sliced For a fresh citrus flavor.
  • 1/2 cup feta cheese, crumbled Can substitute with goat cheese.
  • 2 tablespoons olive oil For drizzling.
  • 1 teaspoon dried oregano

Method

Preparation

  • Preheat your oven to 400°F (200°C).
  • On a large sheet pan, arrange the salmon fillets in the center.
  • Surround the salmon with cherry tomatoes and Kalamata olives.
  • Drizzle olive oil over the salmon and vegetables, and season with oregano, salt, and pepper.
  • Top each salmon fillet with lemon slices and crumbled feta cheese.

Baking

  • Bake in the preheated oven for 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Serving

  • Serve warm, drizzled with the pan juices.
