Method
Preparation
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the sliced vegetables and sausage.
- Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper.
- Toss everything together until well coated.
- Spread the mixture evenly on a sheet pan.
- Bake for 25-30 minutes, or until the sausage is cooked through and the vegetables are tender.
Serving
- Serve this dish hot, straight from the oven.
- It pairs nicely with a side of crusty bread, a light salad, or served on a bed of rice or quinoa.
