  • 2 cups bell peppers, sliced Any color bell peppers work well.
  • 1 cup zucchini, sliced You can substitute with other vegetables.
  • 1 cup red onion, sliced You can use yellow or white onion as well.
  • 2 tablespoons olive oil For drizzling over the veggies.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning

Method

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, combine the sliced vegetables and sausage.
  • Drizzle with olive oil and sprinkle with garlic powder, Italian seasoning, salt, and pepper.
  • Toss everything together until well coated.
  • Spread the mixture evenly on a sheet pan.
