  • 1 lb large shrimp, peeled and deveined Choose large, fresh shrimp for the best flavor and texture.
  • 4 tablespoons butter
  • 4 cloves garlic, minced
  • 1/2 cup white wine or chicken broth
  • 1 each lemon, juiced
  • Salt and pepper to taste
  • Chopped parsley for garnish
  • Pasta, zucchini noodles, or rice for serving Serve over your choice of starch.

Cooking

  • In a large skillet, melt butter over medium heat.
  • Add minced garlic and sauté until fragrant, about 1 minute.
  • Pour in white wine or chicken broth and lemon juice, bringing the mixture to a simmer.
  • Add the shrimp, season with salt and pepper, and cook until the shrimp are pink, about 3-4 minutes.
  • Remove from heat and stir in chopped parsley.
  • Serve immediately over pasta, zucchini noodles, or rice.

Notes

Shrimp scampi is best served hot, right from the skillet. Don’t forget to provide some crusty bread on the side to soak up the delicious buttery sauce. If you have leftovers, store them in an airtight container in the refrigerator for up to 2 days. When reheating, do so gently on the stovetop or in the microwave to avoid overcooking the shrimp.
