Ingredients

Main Ingredients

  • 8 ounces peeled & deveined shrimp
  • 8 ounces mushrooms (baby bellas work great)
  • 3 ounces cream cheese
  • 2 teaspoons mayo
  • 1 tablespoon minced garlic
  • 1 teaspoon lemon juice
  • Salt to taste
  • Pepper to taste

Toppings

  • 1 tablespoon Italian breadcrumbs
  • 1 tablespoon grated parmesan cheese (or substitute with 1 tablespoon breadcrumbs)
  • 1 tablespoon unsalted butter

Method

Preparation

  • Clean the mushrooms and remove their stems. Discard the stems.
  • Preheat the oven to 400℉. Place the mushrooms upside down on a baking sheet and pre-bake for 15 minutes.
  • Press the shrimp between paper towels to remove excess moisture.

Cooking

  • Heat oil in a frying pan over high heat. Add the shrimp, season with salt and pepper, and cook until pink.
  • Shortly before they are done, add the minced garlic.
  • Chop the cool shrimp into small pieces and place them in a bowl.
  • Add the cream cheese, mayo, lemon juice, and season with salt and pepper.
  • In another bowl, melt 1 tablespoon of butter and mix with breadcrumbs and parmesan cheese.
  • Fill each mushroom with the shrimp mixture and top with the breadcrumb mixture.
  • Bake in the preheated oven for 20 minutes or until the tops are golden brown.

Notes

Make sure to thoroughly clean the mushrooms and remove the stems so that they can hold the filling well. Press the shrimp dry to avoid a watery filling. Consider adding a pinch of red pepper flakes to the filling for heat. Experiment with herbs like parsley or dill for added flavor.
