- 1 pound boneless, skinless chicken breasts
- 1 can white beans (drained and rinsed)
- 1 cup chicken broth
- 1 cup heavy cream
- 1 onion (diced)
- 2 cloves garlic (minced)
- 1 green bell pepper (diced)
- 1 tablespoon olive oil
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Chopped cilantro (for garnish)
Method
Preparation
- In a large pot, heat olive oil over medium heat. Add diced onion, garlic, and green bell pepper. Sauté until softened.
- Add the chicken breasts, cumin, chili powder, salt, and pepper. Pour in the chicken broth and bring to a boil.
- Reduce heat and simmer for about 20 minutes, or until chicken is cooked through. Remove chicken and shred it.
- Return shredded chicken to the pot, add white beans and heavy cream, and stir to combine.
- Simmer for another 10 minutes until heated through.
- Serve hot, garnished with chopped cilantro.

Notes
For extra flavor, consider adding jalapeños or diced green chiles. You can use rotisserie chicken to save time; just shred and add it in during the last few minutes of cooking. Play around with spices; if you like it spicier, add more chili powder or some cayenne pepper.
