  • 2 lbs beef stew meat
  • 1 can coconut milk (14 oz)
  • 2 tablespoons curry powder
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 red bell pepper, sliced
  • 1 can diced tomatoes (14 oz)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method

Preparation

  • In a slow cooker, combine the beef stew meat, coconut milk, curry powder, chopped onion, minced garlic, grated ginger, sliced red bell pepper, and diced tomatoes.
  • Season with salt and pepper.
  • Stir well to combine all ingredients.
  • Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef is tender.

Serving

  • Serve over rice or with naan, garnished with fresh cilantro.

Notes
