- 2 lbs beef stew meat
- 1 can coconut milk (14 oz)
- 2 tablespoons curry powder
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, sliced

- Salt and pepper to taste
- Fresh cilantro for garnish
Method
Preparation
- In a slow cooker, combine the beef stew meat, coconut milk, curry powder, chopped onion, minced garlic, grated ginger, sliced red bell pepper, and diced tomatoes.
- Season with salt and pepper.
- Stir well to combine all ingredients.
- Cover and cook on low for 6-8 hours or on high for 4-5 hours until the beef is tender.
Serving
- Serve over rice or with naan, garnished with fresh cilantro.

Notes
For added spice, consider adding a chopped chili pepper or a pinch of red pepper flakes.
