Ingredients
For the Chicken
- 1 pound boneless, skinless chicken breasts
- 3 cloves garlic, minced
- 1/4 cup fresh lemon juice
- 1 medium onion, diced
- 1/4 cup water
- 1 tablespoon olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon oregano
- 1/4 teaspoon allspice
- 1 teaspoon lemon pepper
For the Tzatziki Sauce
- 1 cup fat-free plain Greek yogurt
- 2 cloves garlic, minced
- 1/2 cup grated cucumber
- 2 tablespoons chopped fresh parsley

Method
Preparation
- Spray the slow cooker with nonstick cooking spray to prevent sticking.
- Place the boneless, skinless chicken breasts inside the slow cooker.
- In a mixing bowl, combine the minced garlic, fresh lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper.
- Pour this mixture over the chicken breasts.
Cooking
- Cover the slow cooker and set it to HIGH for 3-4 hours or LOW for 6-8 hours.
Preparing Tzatziki Sauce
- While the chicken cooks, prepare the Tzatziki sauce. In another bowl, mix the Greek yogurt, minced garlic, grated cucumber, chopped parsley, and salt. Cover and refrigerate for at least one hour.
Serving
- Once the chicken is cooked, use two forks to shred the meat within the slow cooker.
- Serve the shredded chicken with warm pocketless pita bread, diced tomatoes, sliced onions, sliced cucumbers, lettuce, and the prepared Tzatziki sauce.

Notes

You can also freeze the shredded chicken for up to 3 months. Just heat it up when you’re ready to enjoy it again! For extra flavor, marinate the chicken in the sauce overnight before cooking. Adjust the spices according to your taste—add more lemon pepper or oregano if you like a little kick. Make sure to shred the chicken while it’s hot for easier shredding and to absorb more flavors.
