Main ingredients

  • 2 lbs baby carrots (or 1½ lbs whole carrots, peeled & sliced) Baby carrots preferred for convenience.
  • ¼ cup brown sugar Adds sweetness.
  • ¼ cup pure maple syrup Use pure for the best flavor.
  • cup butter, cubed Can be substituted with olive oil for a healthier option.
  • 1 tsp salt Enhances flavor.
  • ½ tsp cinnamon Adds warmth to the dish.
  • tsp black pepper A little spice to balance the sweetness.
  • to taste Fresh thyme (optional) Garnish for added flavor.

Method

Preparation

  • Place the carrots in the slow cooker.
  • Top with brown sugar, salt, cinnamon, and black pepper.
  • Pour the maple syrup over the carrots and dot with butter cubes.

Cooking

  • Cover the slow cooker and cook on low for 5–6 hours or high for 3 hours, stirring once or twice.
  • For a thicker glaze, uncover for the final 30 minutes or reduce the sauce on the stovetop.
  • Garnish with fresh thyme, if desired, and serve warm.
