- 1 cup sourdough starter (active and bubbly)
- 1 cup rolled oats
- 1/2 cup all-purpose flour (or whole wheat flour) You can use whole wheat flour for a heartier bar.
- 1/2 cup brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter (melted)
- 1/2 cup fruit jam (your choice) Feel free to experiment with different flavors.
- 1 teaspoon vanilla extract
- optional chopped nuts or seeds For added texture and nutrition.
Method
Preparation
- Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
- In a large bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt.
- In another bowl, mix the sourdough starter, melted butter, and vanilla extract.
- Pour the wet mixture into the dry ingredients and stir gently until just combined.
- Spread half of the mixture in the greased baking dish, layer it with jam, and top with the remaining mixture.
Baking
- Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Allow to cool for 15 minutes, then slice into squares or rectangles.

Notes
Serve warm with a dollop of yogurt or a drizzle of honey for added sweetness. Store completely cooled bars in an airtight container at room temperature for up to three days or refrigerate for a week. They can also be frozen for up to three months.
