Ingredients

Main Ingredients

  • 1 cup sourdough starter (active and bubbly)
  • 1 cup rolled oats
  • 1/2 cup all-purpose flour (or whole wheat flour) You can use whole wheat flour for a heartier bar.
  • 1/2 cup brown sugar
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter (melted)
  • 1/2 cup fruit jam (your choice) Feel free to experiment with different flavors.
  • 1 teaspoon vanilla extract
  • optional chopped nuts or seeds For added texture and nutrition.

Method

Preparation

  • Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  • In a large bowl, combine the rolled oats, flour, brown sugar, baking soda, and salt.
  • In another bowl, mix the sourdough starter, melted butter, and vanilla extract.
  • Pour the wet mixture into the dry ingredients and stir gently until just combined.
  • Spread half of the mixture in the greased baking dish, layer it with jam, and top with the remaining mixture.

Baking

  • Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  • Allow to cool for 15 minutes, then slice into squares or rectangles.

Notes
