- 1 cup sourdough discard
- 1 cup rolled oats
- 1/2 cup honey or maple syrup Can use either sweetener based on preference.
- 1/2 cup nut butter Peanut butter, almond butter, etc.
- 1/2 cup nuts (chopped) Chopped almonds, walnuts, etc.
- 1/2 cup dried fruit Raisins, cranberries, etc.
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon (optional) Add for extra flavor.
Method
Preparation
- Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
- In a large bowl, combine sourdough discard, rolled oats, honey, and nut butter until well mixed.
- Stir in chopped nuts, dried fruit, salt, and cinnamon (if using).
- Spread the mixture evenly in the prepared baking pan and press down firmly.
Baking
- Bake for 20-25 minutes, until the edges are golden brown.
- Let cool completely in the pan before cutting into bars.

Notes
