Deliciously chewy snack bars made from leftover sourdough discard, packed with oats, nuts, and dried fruits.

Ingredients

Main ingredients

  • 1 cup sourdough discard
  • 1 cup rolled oats
  • 1/2 cup honey or maple syrup Can use either sweetener based on preference.
  • 1/2 cup nut butter Peanut butter, almond butter, etc.
  • 1/2 cup nuts (chopped) Chopped almonds, walnuts, etc.
  • 1/2 cup dried fruit Raisins, cranberries, etc.
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon (optional) Add for extra flavor.

Method

Preparation

  • Preheat oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, combine sourdough discard, rolled oats, honey, and nut butter until well mixed.
  • Stir in chopped nuts, dried fruit, salt, and cinnamon (if using).
  • Spread the mixture evenly in the prepared baking pan and press down firmly.

Baking

  • Bake for 20-25 minutes, until the edges are golden brown.
  • Let cool completely in the pan before cutting into bars.

Notes
