- 1 cup sourdough starter discard
- 1 1/2 cups all-purpose flour
- 1/4 cup sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, cold and cubed Ensure butter is very cold for a flaky crust.
- 1/4 cup milk
- 1 teaspoon vanilla extract
- to taste jam or fruit filling of choice
- 1 egg beaten with 1 tablespoon water (for egg wash)
Method
Preparation
- In a large bowl, mix the sourdough starter, flour, sugar, and salt.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the milk and vanilla until a dough forms.
- Divide the dough into two halves, flatten them into disks, and wrap in plastic wrap. Refrigerate for at least 1 hour.
Baking
- Preheat the oven to 375°F (190°C).
- Roll out one disk of dough on a floured surface to about 1/8 inch thick.
- Cut into rectangles and place half of them on a baking sheet.
- Spoon a small amount of jam onto the center of each rectangle.
- Top with the remaining rectangles, sealing edges with a fork.
- Brush with egg wash.
- Bake for 15-20 minutes or until golden brown.
- Let cool before serving or freeze for later.

Notes
