Ingredients

Dough Ingredients

  • 1 cup sourdough starter discard
  • 1 1/2 cups all-purpose flour
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed Ensure butter is very cold for a flaky crust.
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • to taste jam or fruit filling of choice
  • 1 egg beaten with 1 tablespoon water (for egg wash)

Method

Preparation

  • In a large bowl, mix the sourdough starter, flour, sugar, and salt.
  • Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the milk and vanilla until a dough forms.
  • Divide the dough into two halves, flatten them into disks, and wrap in plastic wrap. Refrigerate for at least 1 hour.

Baking

  • Preheat the oven to 375°F (190°C).
  • Roll out one disk of dough on a floured surface to about 1/8 inch thick.
  • Cut into rectangles and place half of them on a baking sheet.
  • Spoon a small amount of jam onto the center of each rectangle.
  • Top with the remaining rectangles, sealing edges with a fork.
  • Brush with egg wash.
  • Bake for 15-20 minutes or until golden brown.
  • Let cool before serving or freeze for later.
