  • 1 cup all-purpose flour

  • 1 large egg
  • 1/4 cup milk (or plant-based milk)

Method

Preparation

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk the sourdough discard, egg, milk, and melted butter (or oil) until smooth.
  • Pour the wet ingredients into the dry ingredients and gently stir until just combined. Be careful not to overmix.

Cooking

  • Lightly grease the waffle iron with cooking spray or oil.
  • Pour the batter onto the iron, using an amount that works for your specific waffle maker.
  • Cook for 4–5 minutes, or until the waffles are golden and crisp.
