- 1 cup ricotta cheese
- 1/2 cup sugar

- 1 1/2 cups all-purpose flour Can substitute with gluten-free flour blend
- 1/2 cup sourdough starter Adds moisture and flavor
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- pinch salt
- Powdered sugar for dusting
Method
Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the ricotta cheese, sugar, and butter until smooth.
- Mix in the key lime juice and zest.
- In another bowl, whisk together the flour, sourdough starter, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
- Bake for 12-15 minutes or until the edges are lightly golden.
- Allow to cool and dust with powdered sugar before serving.

Notes
