  • 1/2 cup sugar
  • 1/4 cup butter, softened Ensure at room temperature
  • 1 tablespoon key lime juice Fresh key lime juice preferred
  • Zest of 1 key lime Use fresh key lime for better flavor
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour blend
  • 1/2 cup sourdough starter Adds moisture and flavor
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch salt
  • Powdered sugar for dusting

Method

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, cream together the ricotta cheese, sugar, and butter until smooth.
  • Mix in the key lime juice and zest.
  • In another bowl, whisk together the flour, sourdough starter, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until combined.
  • Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  • Bake for 12-15 minutes or until the edges are lightly golden.
  • Allow to cool and dust with powdered sugar before serving.
