  • 2 cups all-purpose flour
  • 1 cup sourdough starter Ensure it is active for best flavor.
  • 2 large eggs
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • Water, as needed Add if the dough is too dry.

Method

Preparation

  • In a large bowl, combine the flour and salt.
  • Make a well in the center and add the sourdough starter, eggs, and olive oil.
  • Mix until a dough forms, adding water a little at a time if needed.
  • Knead the dough on a floured surface for about 10 minutes until smooth.
  • Wrap the dough in plastic wrap and let it rest for at least 30 minutes.

Cooking

  • Roll out the dough using a pasta machine or a rolling pin to your desired thickness.
  • Cut into your preferred pasta shape.
  • Cook in boiling salted water for 2-4 minutes or until al dente.
  • Drain and serve with your favorite sauce.
