Method
Preparation
- In a large bowl, combine the flour and salt.
- Make a well in the center and add the sourdough starter, eggs, and olive oil.
- Mix until a dough forms, adding water a little at a time if needed.
- Knead the dough on a floured surface for about 10 minutes until smooth.
- Wrap the dough in plastic wrap and let it rest for at least 30 minutes.
Cooking
- Roll out the dough using a pasta machine or a rolling pin to your desired thickness.
- Cut into your preferred pasta shape.
- Cook in boiling salted water for 2-4 minutes or until al dente.
- Drain and serve with your favorite sauce.
